Veggie omlette in an avocado

This is a simple easy to cook recipe for breakfast or brunch. Good to taste and great health wise especially for the heart, all with the goodness of omega 3 fatty acids and protein. Also because it’s very low in carb ie less sugar and high on fiber its a good dish for people who are trying to lose weight. Saw somewhere that you could bake an egg sunny side up in an avocado, my version is omelet in an avocado. The following recipe serves 1 person:



  • 1 ripe avocado
  • 1 egg
  • 1/2 medium-sized onion
  • 1/2 medium-sized tomato
  • 2 green chillies
  • Few mint leaves
  • 1/2 tsp of kasundi(Bengali mustard sauce)
  • salt to taste.


  • First finely chop all the vegetables and keep them in a bowl.
  • Crack an egg into the veggies, add salt and beat well using an egg beater.
  • Slice the avocados in half, and take out the pit. Scoop out about two tablespoons of flesh from the center of the avocado, just enough so the egg mix will fill up the center.
  • Line each avocado half with kasundi.
  • Mash the scooped up avocado and mix into the egg and veggie mixture.
  • Try to place one half of the avocado into a same size cereal bowl. It should sit firmly.
  • Pour in the egg mixture into the avocado half, taking care that none of it spills out.
  • In a microwave oven cook on full heat for 2 min. Cooking time will depend on the amount of the egg mix and the size of avocados.

Your egg omlettes in avocado are ready to serve.
